    We were in Bogota in early Feb and went on the Market Food tour. We were taken to the private market where we met Maria. We meandered through the market stopping for empanadas, coffee, and eventually fruit. There was lots to take in from flowers, vegetables fruit, herbs, meat, and many other staples of Columbia. Maria used the word diversity often to demonstrate the immense garden which is Columbia. She was very passionate and knowledgeable really had us re thinking about our food from all aspects, our senses, palate, smell, sight, psyche, and culture. Also where it comes from, and the people who work hard to produce it. It was like a counselling session on food and I have a new appreciation whenever I eat. We can’t say enough about Maria and we thoroughly enjoyed her company. We were happily surprised when she was also involved in the Top Chef Dinner which we also highly recommend. Thank you Maria and 321 Columbia for a GREAT experience.
